  1. Finely chop and saute the onion, and the whole shallots in the olive oil until cooked.

  3. Add the herbs and transfer to the oven at 120C for a few hours until the meat is very tender. You may need to add more stock.
  4. Transfer to a serving dish and add the sliced potatoes, sprinkle with salt and pepper. Return to the oven until the potatoes are cooked and crispy around 35 minutes at 190C.

An easy meal for any night of the week. I'm really not big on New Year's resolutions. I kind of figure, why wait until the beginning of the year to start something. Drain one can of tomatoes, discarding liquid; add to slow cooker. Stir in beans, chili powder, cumin, salt and remaining tomatoes.
