  1. Prepare Brinjal or egg plant half kg
  2. Get 2 large potatoes
  3. Take 2 tomatoes

  6. Get Half tsp turmeric powder
  7. Prepare Quater tsp Zeera cumin whole
  8. Make ready Pinch meethi dana or mustard seeds
  9. Take 2 tsp gram flour
  10. Get Oil for deep frying
  11. Make ready 2 Tsp oil for cooking

Place the stuffed eggplants carefully into the wok and cover it with a lid. Let it cook on a low. add brinjal in this. give it a stir. pour some water. and your tamarind paste. bring this to a boil. simmer untill everything is cooked and gravy gets little thicker. The gravy looks so delicious and I have have few more servings f rice.btw the wok looks fabulous with nice work. Heat oil in the wok again.

Steps to make Brinjal in a wok:
  1. Peel & cut potatoes in round shape also peel & cut Brinjal into small pieces & coot Brinjal with gram flour..
  2. In wok add oil for deep frying first deep fry potatoes for 5 min thrn take it away & keep aside.
  3. In same wok then fry bringal for 5 min then drain it & keep it aside.
  4. Remove carefully oil from wok & add only 2 Tsp of oil in wok saute chopped onion in it thrn add mustard seeds, turmeric, chilli powder, salt & chopped tomatoes & cook for about 5 min on medium flame.
  5. Then add fried potatoes & Brinjal in wok & slowly stir it with caution & cook on high flame for 2 min then put it on dum for 5 min..
  6. Garnish it with coriander leaves & green chillies..enjoy

Dip stuffed brinjal rings in beaten egg, coat with breadcrumbs and deep-fry till crisp. (you can also coat the brinjal rings in a flour batter instead of breadcrumbs, if you like). Remove and drain on absorbent paper. To serve, arrange fried brinjal rings on a plate and spoon. Heat oil in a wok and add the curry leaves and mustard seeds. When the mustard splutters add the chopped onion and green Stir the brinjal so that it gets coated in the spices.
