How to make zucchini fritters vegan? Instead of eggs, I used chickpea flour (this has been my favorite ingredient lately). These crispy, light, gluten free zucchini fritters? They not only hold together, they have so much going for them that you could even serve them on a gluten free bun as vegetable burgers (according to my children, who kept calling them "zucchini burgers," ignoring my pleading, as usual).
Instructions to make Zucchini Fritters (Gluten-Free):
- Slice the zucchini into thin strips with a vegetable slicer. Put them in a bowl and set aside.
- In a small bowl, combine the yoghurt, cucumber, fresh dill, lime juice, garlic (optional), salt, and pepper and chill it in the refrigerator.
- Squeeze the zucchini to drain as much liquid as possible.
- In a bowl, add the zucchini, green onion, fresh dill, egg, flour, and salt, then add the cheese at the end.
- Heat a skillet or a electric griddle, apply some oil or spray it with oil, and pour in 1/6 of the batter at a time and pan-fry them.
- Cook for about 3 minutes or until golden brown. Turn over and cook the other side. Repeat the process from Step 5 and Step 6 until the batter is used up.
- Add the energy of your love and appreciation, and serve it up with the yoghurt sauce.
Our Gluten-Free Zucchini Fritters Are Not Deep-Fried: To cook these savory little bites we used a kitchen tablespoon to place mounds of the zucchini mix onto a lightly oiled skillet. They cooked for three minutes on one side then we flipped them over and cooked for another three minutes. These Gluten Free Zucchini Fritters will not disappoint. My kids especially enjoy eating them because they feel like they're eating hash browns, but they're getting so many more nutrients. I make extra (slightly undercooked) and store them in the freezer.
